These protein-baked oats burst with the flavor of warming cinnamon spices and are baked to perfection within minutes. Having cinnamon baked oatmeal in the morning feels like a cross between enjoying a cozy bowl of belly-warming oatmeal and an IKEA cinnamon roll for breakfast, all while keeping things gluten-free, high in protein and all over healthy.

The baked cinnamon roll oatmeal features a soft and sweet baked oatmeal base loaded with flavors of a cinnamon roll. What takes it to the next level is a cinnamon coconut sugar swirl and an optional topping of Greek yogurt cream cheese icing.

These extra steps take only minutes and turn this into an oatmeal that really has all the flavors you love from a cinnamon roll! The recipe itself is super simple.

Just like with Tiktok baked oats, we blend all ingredients together and pour the mixture into our casserole dish. This recipe is for single serve baked oats so if you want to have baked oats for more than one, double it or triple it.

INGREDIENTS YOU NEED FOR THIS CINNAMON OATMEAL RECIPE

You will need the following ingredients listed below to make this oatmeal bake (the exact measurements, nutrition information and the printable recipe card are all below):

  • Certified gluten-free oats – can use quick oats, rolled oats, or old fashioned oats, but stay away from steel cut oats as they make the recipe chewy.
  • Banana
  • Pure maple syrup
  • Vanilla protein powder – can use vegan protein powder if desired.
  • Cinnamon
  • Unsweetened vanilla almond milk – oat milk, cashew milk, soy milk, coconut milk, or milk of choice.
  • Baking powder
  • Vanilla extract
  • Coconut sugar – or light brown sugar.
  • Cream cheese – for the cream cheese glaze.
  • Plain greek yogurt
  • Powdered sugar – or sugar-free alternative.
  • Optional – coconut oil, cashew butter, chocolate chips, etc.

​HOW TO MAKE

  1. In a high speed blender, blend the oats until they turn into a fine flour.
  2. Add in all remaining dry ingredients and wet ingredients in blender and blend on high. Pour into a greased oven safe dish and swirl in the coconut sugar/cinnamon mixture in circles.
  3. Bake at 350F for 22-25 minutes.
  4. Once cooled slightly, top with cream cheese frosting and enjoy!

CAN I MAKE THIS IN AN AIR FRYER?

You can absolutely make this in an air fryer. For air fryer baked oats I would divide the mixture between two small round ramekins.

Simply spray your ramequins with non stick cooking spray. Divide the oat mixture between two ramequins and bake in the air fryer. Let the baked oats cool down for 5-10 minutes before topping with the icing and serving.

MAKE IT VEGAN

For vegan baked oats make sure to use a vegan protein powder. You can use vegan cream cheese and vegan yogurt for the icing. The oatmeal base is already vegan.
