FAQs

How do you keep green bean casserole from being soupy? ›

Mistake #5: A Runny Casserole

If you don't, the excess water from the beans can leak out into the casserole and make it thin and runny. If you sense it's a little watery, "add a thickener like roux or starch to absorb the additional liquid or cook a little longer," she says.

Why is my green bean casserole so runny? ›

Green bean casserole should have a nice thick sauce that coats the green beans—it should not resemble soup. One common cause of a watery casserole is not adding enough thickener, such as flour or cornstarch, to your sauce.

What tastes better canned or frozen green beans? ›

Frozen green beans are not as good as fresh, but they're miles better than canned ones and thus a decent compromise. The nice thing about frozen green beans is that they're quick frozen but not cooked, which means they retain their color—although their texture suffers a bit in the process of freezing and thawing.

How do you make beans less liquidy? ›

If your beans are still too watery after prolonged cooking and mashing, consider adding a thickener like cornstarch, all-purpose flour, or arrowroot. To do this, first, make a slurry of equal parts thickener and water, then slowly add it to your refried beans. They should thicken considerably.

How do you keep green beans from getting soggy? ›

Boil the beans for about three minutes in a pot of boiling water, then drain and place them in a bowl of ice water for three minutes. Dry well on a dish towel or paper towels. “Pro tip: quick freeze first!” says Susie who insists the extra step is worth it.

How do you thicken watery bean soup? ›

In a separate bowl, dissolve a teaspoon or two of cornstarch or all-purpose flour in a small amount of cold water. Add the slurry to the bubbling soup. The soup should thicken up. Add more cornstarch or flour as needed until the soup reaches your desired consistency.

How do you reduce the liquid in baked beans? ›

All you have to do is continue to let the beans cook but uncover them this time. While they heat up without a lid, the water will evaporate more rapidly and you should have thickened beans in no time. You can simply watch the liquid levels and take the beans off the heat when they've reached your preferred texture.
